The Original Diet Cabbage Soup Recipe
1 x head cabbage 6 x medium onions 6 x spring onions 6 x carrots 2 x green or red peppers 3 x large tomatoes 5 x sticks celery, trimmed 110g (4 oz) uncooked brown rice salt and freshly-ground black pepper
Cut the vegetables into small pieces. Place in a large pot and add enough cold water to cover. Bring to boil and then simmer uncovered for about ten minutes.
Cover, and then simmer on a low heat until the vegetables are soft. Simmer for 10-15 minutes (no longer as the vitamins start to evaporate).
While the soup is simmering cook the rice according to the instructions on the packet. Add the rice when the soup is cooked. Season to taste with salt and pepper.
Timesaver tip: Cool what you don’t need that day and then keep your cabbage soup in the fridge, or freeze.
